Golumbki – Stuffed Cabbage – Recipe Paleo

Look what I made!


For 31 years my husband talked about Golumbki – that his Polish Grandma made.
I made it tonight for the first time.


Takes 30+ minutes to prep, an hour to cook.

IMG_7407 This is Paleo Golumbki – no rice needed!

I used organic frozen riced cauliflower from Costco.

 

Ingredients

  • 1 head Savoy cabbage
  • 2 lb grass-fed ground beef
  • 1 Tbs Avocado Oil or Coconut Oil
  • 1/2 yellow onion, diced finely
  • 1-1/2 cups of frozen or fresh riced cauliflower
  • 1/2 tsp garlic powder
  • 1/2 tsp Real Salt
  • 3/4 tsp black pepper
  • 15 oz organic chopped tomatoes
  • 15 oz organic tomato sauce

Directions

Preheat the oven to 350 degrees.

Boil a pot of water large enough for your cabbage head.

  • Core the cabbage
  • Boil it whole
  • As outer leaves begin to float and separate, gently remove them to a clean dish towel.
  • Once all the leaves have been removed, let them cool.

Meanwhile, in a bowl combine beef, garlic powder, salt and pepper.

In a skillet, heat avocado oil, add onion and sauté for 3 minutes. Add cauliflower and continue cooking for 2 more minutes. Allow to cool for a few minutes.

Add the cauliflower and onion to the meat mixture, mixing by hand.

Mix the tomatoes and the sauce and spoon 1-1/2 cups into the bottom of an oven-proof baking dish.

 

 

 

Roll the Golumbki

Place a large spoonful of the meat into the cabbage leave and roll from the stem-side out. Half way fold in the two sides and continue rolling.

Place the cabbage roll, seam down in the baking dish.

Pour remaining tomato mixture over the top. Cover and back for 1 hour.
