Broiled Cod with White Wine Tomato Relish

Prepare the Relish:

  • 1/2 cup Red Onion, chopped
  • 1/4 cup white wine
  • 3 cloves garlic, pressed
  • 1 tsp dried basil
  • 1/2 – 1 tomato chopped
  • 2 Tbs avocado oil
  • 1/4 tsp Crushed Red Pepper Flakes
  • 1/2 tsp Redmonds Real Salt

2 Cod Filets

  • Put a stainless steel skillet under the broiler to preheat for 10 minutes
  • Coat the cod filets in avocado oil
  • Add the cod to the skillet and broil 7 minutes

Serve fish with the relish on top.
