Emily’s Story – 80 Pound Weight Loss

Weight and health issues are two things I have struggled with my entire life.

I was the overweight kid in my family and can recall being placed on special diets by the age of eight, diet supplements by age 12, and by my early 20’s, I felt like I had tried every popular diet plan out there. Sometimes I found “success” in these plans, but the results were never lasting and I never felt as good as I thought that I should.

In the Fall of 2011, the Ricci family introduced me to Erin’s teachings on “real food”. They shared their testimonies with me of how this way of eating changed their lives and they encouraged me to attend Erin’s next class.  I did so, participating in the three week elimination diet to discover hidden food sensitivities. I learned that I am gluten intolerant and implemented the dietary changes recommended. 

For me, it was more than another diet, it was a lifestyle change that focused on eating real food. Eating this way has been so rewarding and helped restore a quality of life I had been losing slowly over the years. I am becoming more intentional about giving my body vegetables, protein and good fats with each meal. I not only feel satisfied but I see continued weight loss. I have been experimenting with new foods and new recipes more over the past few months and it has actually been a lot of fun.

Since November 1, 2011 I eliminated gluten from my diet (gluten is found is grains like wheat, barley and rye) and began to focus on eating unprocessed whole food.

  • I have lost over 80 pounds in that time.
  • I no longer experience heart palpitations
  • My chronic back pain and episodes of severe sciatica have been reduced to rare occurrences
  • I have more energy, less cravings, a regular period for the first time in 10+ years

I simply feel better than I ever have. I am so thankful for Erin and for the opportunity I have had to learn from her!

I feel a sense of freedom and enjoyment that I never did before and I am excited to continue this journey towards better health and wellness.
