Simple Beef and Vegetable Stir Fry
This is a simple stir fry because you can use just one vegetable, like broccoli, with left over meat and dinner is on the table in minutes. For this version, I used a variety of vegetables that I had on hand.
- 
- 2 handfuls broccoli (florets plus the stem can be cut into thin slices)
 - 3 Brussels sprouts, quartered
 - 1 stalk celery
 - 4 asparagus spears
 - 4 baby carrots, sliced
 - 1/4 onion, sliced
 - 3 cloves garlic, pressed
 - Left over steak
 - 1 Tbs coconut oil
 - 2 Tbs San J gluten-free Tamari sauce or coconut aminos
 
 
Directions
Sauté vegetables (except quick-cooking broccoli and asparagus) in coconut oil until soft, about 7 minutes.
Add broccoli, asparagus and steak and stir fry until vegetables are lightly cooked (3-5 minutes and broccoli is bright green)
Add 2 Tbs Tamari and heat through.

Cooking Notes
Lightly cook vegetables to retain high nutritional value.
When preparing broccoli, onions and garlic, let sit 5 minutes after cutting to increase the health-promoting benefits.
Asparagus is prepared by rinsing with water. Break off and discard the lower woody stem. Sauté 3-5 minutes.
