Chicken Cacciatore – Simple Prep, Paleo

Ingredients

  • 2 pounds chicken thighs
  • Salt
  • Pepper
  • Garlic Powder
  • Onion Powder
  • 1 Red Bell Pepper, diced
  • 14oz can Rotes Tomatoes, drained
  • Rosemary
  • Thyme

Instructions

  1. Arrange thighs in 9×13 baking dishes
  2. Sprinkle generously with all seasonings
  3. Add red bell pepper
  4. Add tomatoes
  5. Cover
  6. Bake, 350 degrees for 30 to 60 minutes
  7. Serve over cauliflower rice
