
Chicken Cacciatore – Simple Prep, Paleo
Ingredients

- 2 pounds chicken thighs
- Salt
- Pepper
- Garlic Powder
- Onion Powder
- 1 Red Bell Pepper, diced
- 14oz can Rotel Tomatoes, drained
- Rosemary
- Thyme

Instructions
- Arrange thighs in 9×13 baking dishes
- Sprinkle generously with all seasonings
- Add red bell pepper
- Add tomatoes
- Cover
- Bake, 350 degrees for 30 to 60 minutes
- Serve over cauliflower rice
