Healthy Chocolate Ice Cream, Dairy-Free, Sugar-Free
This is a delicious ice cream recipe that is dairy-free, low carb and rich in healthy fat.
If you like rich, chocolate ice cream, you will love this!
I freeze coconut milk ahead of time in silicone ice cube trays or other flexible containers.
You will need 1-1/2 cups of frozen coconut milk.
I use the VitaMix blender, but a food processor would also work.
- 2 egg yolks, from pasture-raised chickens
- 1/4 cup raw cacao
- 1 tsp organic vanilla
- 1/4 tsp liquid Stevia
- 1 tsp raw honey
- 1 1/2 cups frozen canned coconut milk –> How to Freeze Coconut Milk
- 1 Tbs gelatin powder, grass-fed source (Great Lakes or Vital Proteins). I also successfully used Collagen Peptides.
Blend. Add a little water if necessary.
The consistency will be similar to soft-serve ice cream at first.
Store in the freezer in an air tight glass container until it freezes to the consistency that you prefer
If it is rock-hard when you want to eat it, scrape it into the Vitamix blender or even use an immersion blender to get the consistency right.
