Creamy Dairy-Free Cauliflower Bake


Here is a delicious, easy recipe that is grain-free, dairy-free. It is a great sub for potatoes, but more flavorful!



Prepare the Cauliflower

  1. Preheat oven to 350 degrees
  2. Cut cauliflower into small florets
  3. Put a pot of water on the stove and bring to a boil
  4. Blanch the cauliflower in the boiling water for 2 minutes
  5. Drain cauliflower and set aside in a separate bowl

Prepare the Creamy Sauce

  1. In a skillet, melt butter
  2. Add 4 cloves of garlic, pressed, and cook one minute
  3. Add arrowroot powder, stir and simmer a few minutes
  4. Stir in mayonnaise
  5. Add Nutritional yeast, stir
  6. Season with salt and pepper

Assemble the Casserole and Bake

  1. Add the sauce to the bowl with cauliflower
  2. Stir in half the bacon
  3. Mix sauce, half the bacon and cauliflower
  4. Transfer the cauliflower mixture to a buttered 8×8 (or 9×9) casserole dish
  5. Bake 30 – 40 minutes
  6. Remove from oven and sprinkle on remaining bacon
