
Creamy Dairy-Free Cauliflower Bake
Recipe
Here is a delicious, easy recipe that is grain-free, dairy-free. It is a great sub for potatoes, but more flavorful!

Ingredients
- One head of cauliflower
- 4 cloves garlic, pressed
- 2 Tbs Kerrygold butter
- 1 cup Milkadamia Macadamia Milk
- 1.5 Tbs Arrowroot powder
- 1/3 cup Avocado Mayonnaise
- 5-6 strips of cooked bacon, crumbled
- 1 Tbs Bragg’s Nutritional Yeast
- Salt and Pepper


Instructions
Prepare the Cauliflower
- Preheat oven to 350 degrees
- Cut cauliflower into small florets
- Put a pot of water on the stove and bring to a boil
- Blanch the cauliflower in the boiling water for 2 minutes
- Drain cauliflower and set aside in a separate bowl

Prepare the Creamy Sauce
- In a skillet, melt butter
- Add 4 cloves of garlic, pressed, and cook one minute
- Add arrowroot powder, stir and simmer a few minutes
- Stir in mayonnaise
- Add Nutritional yeast, stir
- Season with salt and pepper
Assemble the Casserole and Bake
- Add the sauce to the bowl with cauliflower
- Stir in half the bacon
- Mix sauce, half the bacon and cauliflower
- Transfer the cauliflower mixture to a buttered 8×8 (or 9×9) casserole dish
- Bake 30 – 40 minutes
- Remove from oven and sprinkle on remaining bacon
