Beef Tagine in Tomato Sauce

Ingredients
- 2 Tbs Coconut Oil
 - 2 cups carrots, chopped
 - 3 cups celery, chopped
 - 1 cup onion, chopped
 - 2 pounds beef stew/chuck roast
 - 1 can diced tomatoes, drained
 - 1 cup Beef Bone Broth
 - 1/2 tsp ground cinnamon
 - 1 tsp cumin
 - 1 tsp garlic powder
 - 1 tsp paprika
 - 1 tsp salt
 - 1 tsp pepper
 
Instructions
- Heat oil in a heavy enameled cast iron Dutch Oven (or crock pot) 
 - Sauté carrot, celery and onion a few minutes, then remove to a bowl
 - Brown the meat
 - Add seasoning
 - Add bone broth
 - Drain tomatoes and add
 - Add remaining vegetables
 - Stir
 - Cover with a heavy lid
