Beef Tagine in Tomato Sauce

Ingredients

  • 2 Tbs Coconut Oil
  • 2 cups carrots, chopped
  • 3 cups celery, chopped
  • 1 cup onion, chopped
  • 2 pounds beef stew/chuck roast
  • 1 can diced tomatoes, drained
  • 1 cup Beef Bone Broth
  • 1/2 tsp ground cinnamon
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Heat oil in a heavy enameled cast iron Dutch Oven (or crock pot)
  2. Sauté carrot, celery and onion a few minutes, then remove to a bowl
  3. Brown the meat
  4. Add seasoning
  5. Add bone broth
  6. Drain tomatoes and add
  7. Add remaining vegetables
  8. Stir
  9. Cover with a heavy lid
  10. Simmer on low 4-6 hours
