Creamy Dairy-Free Cauliflower Soup

Ingredients

  • 1 head cauliflower, chopped
  • 3 Tbs grass-fed butter
  • 1 onion, chopped
  • 4 clove garlic, crushed
  • 3 cups chicken bone broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 can full fat coconut milk
  • 2 tsp lemon juice
  • 3 Tbs Nutritional Yeast
  • 1/2 – 1 tsp Real Salt
  • Pepper to taste
  • 1/2 tsp Kinder’s Organic The Blend Seasoning (Salt, Pepper and Garlic)
  • Optional: add in cooked chicken or beef at the end.

Instructions

  1. Heat butter in a soup pot.
  2. Add chopped onion, and cook 5 minutes.
  3. Add garlic, cook 1 minute.
  4. Add chopped cauliflower, cook 3 minutes.
  5. Add chicken bone broth, thyme and bay leaf.
  6. Bring to a simmer.
  7. Cook until cauliflower is tender, 15 minutes.
  8. Remove and discard bay leaf.
  9. Blend soup in the Vitamix Blender or with an immersion blender until smooth.
  10. Stir in coconut milk, lemon juice, seasoning and nutritional yeast.
  11. Reheat. Taste and add more seasoning if preferred.
