Creamy Dairy-Free Cauliflower Soup

Ingredients
- 1 head cauliflower, chopped
- 3 Tbs grass-fed butter
- 1 onion, chopped
- 4 clove garlic, crushed
- 3 cups chicken bone broth
- 1 tsp dried thyme
- 1 bay leaf
- 1 can full fat coconut milk
- 2 tsp lemon juice
- 3 Tbs Nutritional Yeast
- 1/2 – 1 tsp Real Salt
- Pepper to taste
- 1/2 tsp Kinder’s Organic The Blend Seasoning (Salt, Pepper and Garlic)
- Optional: add in cooked chicken or beef at the end.
Instructions
- Heat butter in a soup pot.
- Add chopped onion, and cook 5 minutes.
- Add garlic, cook 1 minute.
- Add chopped cauliflower, cook 3 minutes.
- Add chicken bone broth, thyme and bay leaf.
- Bring to a simmer.
- Cook until cauliflower is tender, 15 minutes.
- Remove and discard bay leaf.
- Blend soup in the Vitamix Blender or with an immersion blender until smooth.
- Stir in coconut milk, lemon juice, seasoning and nutritional yeast.
- Reheat. Taste and add more seasoning if preferred.
