
Erin’s Famous Chili
This is THE award-winning chili recipe that I created in the 80’s for the Great Alexian Brothers Medical Center Laboratory Chili Cook Off (kind of a non-event, but I did win!).
- 1 chopped onion
- 2 cloves garlic
- 1 pound grass-fed ground beef
- 2 cup tomatoes (canned or fresh)
- 15 oz tomato sauce
- 1 1/2 tsp Real Salt
- 1/8 tsp pepper
- 2+ Tbs. Chili Powder
- 10 drops Tabasco
- 1 cup water
- (optional 2 c kidney beans)
Brown the beef, remove the cooked meat.
Cook the onion and garlic in same pot, add coconut oil if needed.
Add all ingredients to the pot and simmer 30 minutes or more.
Serves 4.
