Lazy Man’s Cioppino – Paleo, Gluten-free, Dairy-free Fish Soup

“Cioppino was developed in the late 1800s by Italian immigrants who fished off Meiggs Wharf and lived in the North Beach neighborhood of San Francisco, many from the port city of Genoa. When a fisherman came back empty handed, they would walk around with a pot to the other fishermen asking them to chip in whatever they could. What ever ended up in the pot became their Cioppino. The fishermen that chipped in expected the same treatment if they came back empty handed in the future. It later became a staple as Italian restaurants proliferated in San Francisco.” Wikipedia

There are a lot of ingredients, but at least you don’t have to walk around with a pot to the other fishermen!

Ingredients

  • 8oz white fish
  • 1 pound scallops
  • 1 can minced clams
  • 1 – 15oz can diced tomatoes
  • 1 – 15oz can tomato sauce
  • 1 can sardines
  • 2 carrots, chopped
  • 1 medium onion, chopped
  • 5 cloves garlic, pressed
  • 2 Tbs Butter
  • 2 Tbs Olive oil
  • 2 cups dry white wine
  • 2 Tbs Red Boat Fish Sauce
  • 8oz Clam juice
  • 2 Tbs Lemon juice
  • 1 tsp Tamari sauce
  • 1 Tbs Celery salt*
  • 1/4 tsp Cayenne pepper*
  • 1.5 tsp Black pepper*
  • 2 tsp Paprika*
  • 1 tsp Ground Mustard*
  • 1 tsp crushed red pepper
  • 1 tsp oregano
  • 1/4 tsp salt
  • 1 Bay leaf

Instructions

  • *Make Seasoning Mix: Use 1 Tbs of the mix.
  • 1 Tbs celery salt
  • 1/4 tsp cayenne pepper
  • 1.5 tsp black pepper
  • 2 tsp paprika
  • 1 tsp ground mustard

  • Blend tomatoes and tomato sauce with sardines
  • In large pot, add butter and olive oil
  • Sauté carrots and onion 5 minutes
  • Add garlic
  • Add 1 Tbs seasoning mix
  • Add 1 tsp crushed red pepper
  • Add 1 tsp oregano
  • Add 1/4 tsp salt
  • Add 1 bay leaf
  • Add tomato mixture
  • Add wine, Fish Sauce, Clam Juice, lemon juice, Tamari sauce
  • Add white fish and clams
  • Broil scallops, brushed with melted butter, 5-6 minutes.
  • Add scallops to the soup, then serve.
