Broiled Cod with White Wine Tomato Relish

Prepare the Relish:
- 1/2 cup Red Onion, chopped
- 1/4 cup white wine
- 3 cloves garlic, pressed
- 1 tsp dried basil
- 1/2 – 1 tomato chopped
- 2 Tbs avocado oil
- 1/4 tsp Crushed Red Pepper Flakes
- 1/2 tsp Redmonds Real Salt
2 Cod Filets
- Put a stainless steel skillet under the broiler to preheat for 10 minutes
- Coat the cod filets in avocado oil
- Add the cod to the skillet and broil 7 minutes
Serve fish with the relish on top.
