Dairy-Free Vegetable Frittata




  • Coconut oil or avocado oil or butter
  • 1/4 bell pepper, chopped
  • 6 cherry tomatoes, halveddairy-free frittata img_0916
  • 1/2 zucchini, sliced thin
  • 1/4 onion, sliced
  • Fresh rosemary
  • Garlic salt
  • Basil
  • Salt and Pepper
  • 4 cooked breakfast sausages, sliced
  • 6 eggs beaten

Heat oil or butter in oven-proof skillet.

Saute vegetables.

Season by sprinkling garlic salt, rosemary, basil, salt and pepper.

Add sausage.

Pour egg mixture over and continue to cook on the stove without stirring, 5 minutes.

Meanwhile, preheat the broiler.

Place pan of eggs under broiler for 60-90 seconds to finish cooking the top, and lightly brown.
