Breakfast Casserole, Dairy-free, Grain-free

Do you have a favorite Real Food egg bake recipe? Use whatever veggies you like and have on hand.

Zucchini Breakfast casserole

  • 2 cups cooked organic breakfast sausage
  • 1/2 zucchini, peeled using julienne peeler
  • 1 cup chopped broccoli
  • 1 red onion, diced
  • 4 cloves garlic minced
  • 8 free range eggs
  • 2 tsp dried basil
  • 1 tsp Real Salt
  • 1/4 tsp organic pepper
  • 8 slices of bacon, cooked while casserole bakes


-Preheat oven 350.

-Sauté onions and garlic until onions start to caramelize.

-Add in garlic, broccoli, shredded zucchini, basil, salt and pepper.

-Saute a few minutes.

-Grease 9×13 with coconut oil

-Pour in meat mixture.

-Spread evenly in the 9×13 pan.

-Pour eggs over meat mixture.

-Bake 30 minutes at 350 or until cooked through and toothpick comes out clean.

-Once the casserole is in the oven, start bacon on the stove top.


Cut casserole and serve with bacon on top.
