
Beef Stew with Carrots, Celery, Onion, Garlic
Beef Stew Recipe
Ingredients
- 1 pound beef stew meat
- 2 Tbs Avocado Oil or Coconut Oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 carrots
- 1 cup onion, chopped
- 1 cup celery, chopped
- 1 Tbs crushed garlic
- 3 Small Red Potatoes, cut in half or quarters
- 1/2 tsp salt
- 1/2 tsp Chili Powder
- Pinch Cayenne
- 1 tsp Paprika
- 1/2 tsp Rosemary
- 1/2 tsp Thyme
- 1 quart Beef Broth
- 14 oz chopped tomatoes (optional, sometimes I leave them out)
Directions
- In a Dutch Oven, heat 2 Tbs Oil.
- Season beef with 1/2 tsp salt and 1/4 tsp pepper.
- Add beef stew meat to Dutch Oven and brown on all sides.
- Remove meat to a bowl.
- Add Onion, Celery, Carrots to Dutch Oven and cook 5 minutes
- Add garlic.
- Add more oil if needed.
- Add Rosemary, Thyme, Paprika, Chili Powder, Cayenne, 1/2 tsp Salt.
- Cook 1 minute.
- Add tomatoes, beef broth. Stir, heat 2 minutes.
- Add potatoes.
- Return meat to Dutch Oven with vegetables and broth.
- Cover and cook on low 1 hour.
- Remove lid and continue cooking on low for 45 minutes until meat and vegetables are tender.
