
Cultured Vegetables 101
Cultured veggies are homemade fermented vegetables like sauerkraut, pickles, and fermented carrots.
Very easy to make! Cabbage and salt!
I chop a head of cabbage and sprinkle with 1-2 Tbs salt. Let sit in the bowl for an hour or so, squishing it around with your hands. You can also pound the cabbage with a wooden pounder.
Water will pull out of the cabbage. Put the cabbage and all accumulated liquid into a quart mason jar, press the cabbage down below the water line. If necessary add more water to bring the level up but leave 1/2 – 1″ head space at top of jar. Cap, let sit on counter one week. Burp the jar (open it) periodically in the first few days as gasses form and want to escape.
After a week put the jar in the frig.
How much sauerkraut should we eat?
Have a forkful at each meal. You can increase the quantity
if you like.
There are more probiotics in a forkful of kraut than you’ll ever get in a pill.
