How to Make Freeze Dried Chicken and Onions
The ability to freeze dry meats is one of the biggest benefits of having a home freeze dryer. You can save money by buying in bulk, preserving leftovers, and reducing food waste. Plus, you don’t have to worry about your meat going bad in your freezer, especially if the power ever goes out.
I prepared the chicken for the freeze dryer by seasoning chicken breasts and topping with an onion mixture. This is a great base that can be reconstituted in chicken broth and ramped up to become Moroccan Chicken.
Ingredients
- 5 pounds of chicken breasts
- Paprika
- Salt, Pepper
- Garlic Powder
- 2 onions, chopped
- Olive oil
- 6 cloves garlic pressed
- 1/4 tsp red pepper flakes
- 1 Tbs oregano
Instructions
- Sprinkle chicken breasts generously with paprika, salt, pepper, and garlic powder.
- Place in 9×13 pans lined with parchment paper for easier clean up.
- Cook onions in olive oil until brown.
- Add garlic, red pepper flakes and oregano.
- Spoon mixture over chicken breasts.
- Cover and bake 375 for one hour.
How to Prepare Cooked Chicken for the Freeze Dryer
- Cool.
- Slice chicken in strips or cubes for the freeze dryer.
- Pre-freeze chicken and onions.
- Freeze right on the Freeze Drying Pans or freeze in 8×8 silicone cake pans, or freeze in quart freezer bags.
- Freeze dry using the “not frozen” option (I find I get better results when I pre-freeze the food, but choose the “not frozen” option on the freeze dryer.)

How to Reconstitute Freeze Dried Chicken
Freeze dried meats rehydrate perfectly back to their original flavor and consistency, so you can enjoy delicious, fresh meals even when you’re pressed for time or on the road.
Rehydrating chicken or other meat is easy. Place the freeze dried meat in a bowl of room temperature water or chicken broth. Use approximately a 1:1 ratio of liquid to freeze dried meat.
Don’t worry about over-hydrating it — your freeze dried meat will only reabsorb the liquid it needs, it will never become soggy.

You can even rehydrate this recipe in a sauce, depending on how the chicken will be used.
For a Mexican dish, rehydrate in enchilada sauce, for example.
Try one of the soy-alternatives from Coconut Secret for a stir-fry. Garlic Sauce and Teriyaki Sauce are great options.
This recipe used baked chicken so you can eat it right away or use it in recipes. Add freeze dried chicken and onions to a slow cooker or to a pot on the stovetop. Add in chicken broth and veggies for soup.

Moroccan Chicken using Freeze Dried Chicken
In a stew pot add
- 4 cups freeze dried chicken
- 4 cups chicken broth or bone broth
- 4 carrots (sliced lengthwise, the cut in 1/2 slices)
- 2 ribs celery, sliced
- 2 bell peppers, cut into bite-sized pieces
- 1 Tbs Paprika
- 2 tsp cumin
- 1/2 tsp ground ginger
- 1/4 tsp turmeric
Cook together until flavors blend.
Optional: Add 4 cup chopped kale and sliced green olives just before serving. Top with slices of fresh lemon.
