Having freeze dried eggs on hand is a great idea. You’ll always have eggs that can be used when you are out of fresh eggs. Plus, it is great to store freeze dried foods for an uncertain future.

Or you can make your own freeze dried eggs. I pay $16 to a local farmer for 72 eggs.

How to Freeze Dry Fresh Eggs

Scramble the eggs with a stainless steel whisk. Avoid using a blender or hand mixer as this will cause frothy eggs that may overflow the tray.

It works best if you freeze dry raw scrambled eggs instead of freeze drying cooked eggs. This method will result in eggs that most closely resemble fresh eggs upon reconstitution. Cooking the eggs then freeze drying will yield a rubbery texture.
I have a medium freeze dryer. Each tray can hold about 18 scrambled eggs (approximately 3 cups of scrambled eggs).

If you do it by weight, it takes about 2.5 to 3.0 pounds of eggs per tray for medium.

Some prefer to pre-freeze the scrambled eggs, but you can go right into the freeze dryer with raw eggs.

No need to line the freeze drying trays with parchment paper when preparing the eggs, but lining trays can be a help when removing freeze dried foods from trays.

Tip:

Try not to spill when dealing with liquids like scrambled eggs. Put the trays in your regular freezer, then fill them for pre-freezing. Or, insert the trays into the Freeze Dryer, pull one out a few inches, load with 18 scrambled eggs, slowly push the tray back in place. Due to a lack of space in my regular freezer, I use the second method. I turn on the freeze dryer and bring the temperature down to freezing before pouring in raw scrambled eggs.

You can also pre-freeze 9 eggs per silicone pan, pop the frozen eggs out, place on the freeze drier tray and GO!

How long will it take?

Maybe 30 hours if not pre-frozen. Maybe 24 hours if pre-frozen.

What to do with Freeze Dried Eggs

Remove them from the trays, powder them in a blender or with a potato masher if you like, quickly get the eggs in a glass jar or mylar bag and add an oxygen absorber, then seal. I use a small metal spatula and break up the freeze dried eggs right on the tray and add the chunks to the bag. Pressing the mylar bag will gently powder the freeze dried eggs without messing with a blender.

How to Cook with Freeze Dried Eggs

Powdered freeze dried eggs can be added to recipes or reconstituted for a scrambled egg breakfast.

How much egg powder equals one egg?

2 tablespoons of raw egg powder to 2 tablespoons of water equals one large egg.

How to Make an Egg Bake Using Freeze Dried or Fresh Eggs

Ingredients

  • 10 eggs or (1.5 cups of freeze dried egg powder reconstituted with 1.5 cups water)
  • Salt & pepper to taste
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • ½ teaspoon thyme
  • 2 – 4 cloves garlic, pressed
  • 1 tablespoon butter
  • 2 Roma tomatoes, diced
  • 2 cups spinach, rough chopped or broccoli, chopped
  • 1 red bell pepper, diced
  • 3 green onions, finely sliced

Instructions

Scramble the eggs with all ingredients except onions and red bell pepper.

In a skillet, melt butter, add onions and bell pepper. Cook for 5 minutes.

Pour the egg mixture into the skillet. Continue cooking until set.

You can stir it as it cooks to make a scrambled egg dish, or let it cook undisturbed, using a spatula to let egg run under cooked edges. Finish the dish by placing the skillet under the broiler. This is going to be more like a frittata.
